Chocolate Cardamom cake

In today’s recipe, the cardamom adds a distinct flavor to the cake.  But don’t forget, it’s always an option to leave it out or add in lesser quantity according to your preference.

The only thing to remember is to make sure you use freshly ground cardamom. The flavor is much better if you grind it fresh instead of directly buying the powder.

The batter may look very thin but no worries, the cake would come out perfect. You can also do a basic icing on it… but lazy me… don’t mind eating it just like that… also trying to reduce my calorie intake…. as if!! 😊

  • 1 ¾ cup all purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 small eggs
  • 1 cup milk
  • ½ cup oil
  • 2 tsp vanilla essence
  • ¾ cup boiling water
  • 1 tsp orange zest
  • ¼ cup orange juice, strained
  • ½ tsp finely ground cardamom powder

Instructions

1

Preheat the oven to 160°C (320° F). Grease and line a 9" X 13" pan. Keep aside.

2

In a large mixing bowl, stir together the sugar, oil and eggs. Whisk till well combined.

3

Sift the flour, baking soda, baking powder, salt, cardamom powder and cocoa powder into the sugar and eggs.

4

Add the milk into the same bowl and mix the above ingredients until well combined.

5

Now add in the vanilla, orange zest, orange juice and cardamom powder.

6

Stir until well blended. Pour the boiling water into the mixture and mix carefully making sure not to spill.

7

Pour into prepared cake tin and bake for 30 minutes or until a toothpick inserted comes out clean.

8

Remove cake from tin and keep on wire rack. Let it cool completely.

Notes

• Use freshly ground cardamom for a more enhanced cardamom flavor • If you want a less subtle Cardamom flavor use ¼ tsp instead of ½ tsp • Be careful while stirring the hot water. Don’t want to burn yourself! • Make sure to let the cake completely cool before placing it in a closed container. This will prevent the top of the cake from becoming sticky.
