Orange Almond Cookies

Sweet, orange-flavoured, homemade almond cookies that are crispy at the edges and soft and chewy at the centre.

These orange flavoured delicious crisp almond cookies are simple and quick to bake in just 30 minutes.

Today’s recipe is a simple reliable recipe made within an hour with just a handful of ingredients. Just 15 minutes to mix the dough and about 15 minutes to bake! No chilling needed. So in less than an hour, you can fill your home with the most delicious scent. Though these almond crisps are so effortless to make, they are heavenly to snack on. So be prepared to be eating more than just one… at least that’s what I did!

Tips to bake these delicious orange biscuits with ground almonds

I have used only the Orange zest but that alone was enough to infuse the cookie with a nice citrus flavour.

Secondly, to coarsely grind almonds, blanch the almonds by placing them with some water in a pan. Bring it to a boil for a couple of minutes. Cool, drain and peel the almonds. Once completely dried, grind the blanched almonds only till coarsely ground.

Lastly, these cookies get really big. So make sure to leave at least 3 inches space between the cookies on the baking tray. Try to drop uniform size dough on the tray to make it possible to cook these cookies evenly. Use a tablespoon to scoop the dough and gently place it on the tray.

Sweet, orange flavored almond cookies that are crispy at the edges and becomes soft and chewy at the center

Ingredients

  • 1 ¼ cup all purpose flour
  • 150 grams butter, softened
  • 1 cup white sugar
  • 1 large egg, room temperature
  • 2 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • ½ cup almonds (measured when whole), blanched, dried and coarsely ground
  • 1 teaspoon orange zest
  • A pinch of salt

Instructions

Line a baking tray and preheat the oven to 170°C (350°F).

Cream butter and sugar till pale.

Beat in egg, vanilla and orange zest.

Mix in the flour, baking powder and salt until well combined.

Now stir the coarsely ground almonds into the butter mixture.

Using a spoon, drop spoonfuls of batter on the baking tray leaving at least 3 inches gap between each cookie. These cookies tend to spread. Make them as consistent as possible.

Bake for 12-15 minutes until they turn golden brown at the edges.

Let the cookies rest for 5 minutes before transferring to a wire rack.

After the cookies are cooled completely, store them in an airtight container for up to 5 days.
