So the solution: Try a little healthy baking! I was surprised to find that this delicious toasted sesame granola recipe was the perfect snack to satisfy my cravings minus the guilt.

The fresh shredded coconut gives this amazing granola a chewy texture. I did not toast the coconut for this breakfast recipe simply because I was getting enough flavours and crunchiness from the nuts and seeds.

How to toast the sesame seeds?

Always toast each variety of nuts and seeds separately. They all have different cooking time. Over low heat, in a wide-bottomed pan toast sesame seeds separately.

The white sesame once toasted turns light brown and splutters. Whereas the black sesame seeds cannot be judged by the colour. You need to watch out for the strong aroma and the spluttering just like when you make microwave popcorn. Keep stirring so the seeds get toasted evenly. Since the seeds are really tiny it burns super fast. So once you hear the splutters and you get a strong aroma, remove the seeds from heat and transfer to a cool pan. Don’t leave the seeds on a hot pan. It would continue cooking.

Difference between white and black sesame seeds:

The most obvious difference is the colour. Even though the colour is entirely different there are only subtle differences in taste. The black sesame seeds seem to be nuttier and more prominent in flavour with a stronger aroma when compared to the white sesame seeds. Substitutions to make this delicious granola to your taste!

  • The ratio of white and black sesame seeds can be changed. For the amount of sweetness and for the balance of flavour I have used 135 grams of toasted sesame seeds. You can make the granola with all black or all white sesame too. I used black sesame mainly because it made my granola look so good!
  • The best part of this recipe is its versatility. Add any variety of nuts you are in the mood for but be sure to maintain them at 120 grams.
  • For a Vegan sesame granola recipe, add coconut oil. Otherwise, I love adding ghee or clarified butter. This makes the granola taste so buttery and yum.
  • Add one tablespoon of any nut butter. I have used peanut butter simply because I love peanuts and that’s the butter we always have at home. I would have loved to try this with almond butter. But just remember the flavour of the butter will be the prominent flavour of your granola.
  • Don’t skip the nut butter. It helps hold all the ingredients together.
  • For sweetness add honey or maple syrup. Honey is cheaper and more available.

How Long will homemade granola last?

Since this recipe contains fresh coconut, store the homemade granola in an airtight container in the refrigerator for up to a week. This crunchy granola recipe with honey is easy to double or even triple.

Toasted sesame granola with yogurt and fruits - The perfect guilt-free breakfast for a sweet tooth.

Ingredients

  • 100 grams white sesame seeds
  • 35 grams black sesame seed
  • 120 grams peanuts, almonds, cashews or any other nuts you prefer
  • 1/3 cup honey
  • ¼ teaspoon salt
  • ¾ cup shredded coconut
  • 2 tablespoon clarified butter (ghee), coconut oil

Instructions

Preheat the oven to 160°C (320°F). Grease an 8” X 8” baking dish with coconut oil or ghee.

In a pan, toast the white sesame seeds on low heat. The seeds turn light brown and would start to sputter with a nice aroma. Remove the pan from heat and transfer the sesame to another bowl. Cool completely.

Repeat this process for the black sesame seeds too.

In a medium bowl, add all the ingredients along with the sesame seeds and mix well.

Transfer the mixture to the baking dish and press lightly.

Bake for 30 minutes stirring once after 15 minutes.

Remove from oven after 30 minutes or when the top layer turns golden brown. Cool completely.

Serve the granola with beaten yogurt and fresh fruits.
