Today’s recipe is an easy apple tart which is extremely simple to make when you use store-bought puff pastry sheets. But wanting to make everything homemade I am learning how to make puff pastry from scratch. But that’s not an easy job. It’s basically a project! Though the process of making the puff pastry is straightforward, it definitely looks like patience is the key! So what better way to finish all of my trial and error pastry sheets? The obvious way – trying out different varieties of tart fillings!! I don’t mind if they are sweet or savoury. I always love a good tart!

Today’s recipe is one such recipe. It turned out to be one yummy Sunday lunch! The caramelization of the onions and sweetness of the apples made an amazing combination along with an occasional crunchiness of the almonds. These cute onion apple tarts with a side of fresh salad make a complete meal.  Hope you too enjoy this tart as much as we did!! Hoping to make more tarts in the future!

How to make hung curd at home for these delicious onion apple tarts?

In this recipe, I have used hung curd mainly as a substitute for sour cream. They have the taste of sour cream but a texture of cream cheese. Line a bowl with a muslin cloth. Add a cup of curd into it. Now tie the cloth and hang it from a place where the bottom does not touch the surface. (I usually hang it on my kitchen tap so the water can drain easily into the sink). This would take at least two hours for all the water to drain from the curd. After the water is drained remove the thick curd from the cloth. Use the curd as needed for these delicious tarts and the leftover curd can be stored in an airtight container and chilled for up to a week. Before using chilled hung curd, lightly whisk the curd for a smooth texture.

The crispy and flaky crust combined with the creaminess of hung curd and sweetness of the apples makes this dish a great meal.

Ingredients

  • Puff pastry sheets cut into 4 X 4
  • 1 tablespoon butter
  • 1 medium sized onion, sliced
  • ½ teaspoon sugar
  • 1 apple
  • Salt, to taste
  • Pepper, to taste
  • ¼ cup chopped almonds
  • 1 cup hung curd or Greek yogurt
  • egg, beaten, for brushing the edges

Instructions

In a pan, sauté the onions in butter. Add sugar. This helps the onions to caramelize.

Once the onions are golden brown, add the apples and almonds. Sauté for another minute.

Preheat the oven to 180°C(350°F).

Roll the puff pastry into a sheet with a thickness of half a centimeter

Cut the puff pastry into squares. Don’t cut the squares too small. The squares should be at least 3” X 5” size. This helps to add a good amount of filling to it.

Lay the sheets on a baking tray lined with parchment paper.

Apply a layer of hung curd on the pastry sheet taking care to

leave an inch gap on all sides.

Now add the apple mixture to the middle of the pastry sheet.

Brush the sides of the pastry with egg to make it golden

brown.

Bake the tart on the lower rack of the oven for 30 minutes or until the pastry sheet is puffed and golden brown.

Now enjoy the caramelized onion apple tart hot from the oven with dollops of hung curd on top! Serve with a side of salad for a complete meal.

Notes

To serve later.. refrigerate and reheat in the oven before serving to have the crispiness of the puff pastry.
